Welcome and introduction
Welcome to the course and meet your educator, Andy Cordier. We will introduce you to the course and discuss what you will cover.
All about knives and cutting equipment
Understanding everything about knives is important, what types of knives, parts of a knife, how to select the best knife for you and where to source knives. We will discuss all of these and more in this section.
Knife safety and care
Knives, small and large cutting equipment, not used correctly or used carelessly can lead to accidents and injury. We discuss the safe use of knives and other cutting equipment.
Week 2
Cutting techniques
Cutting techniques
There are certain basic cuts that every chef should know, and there are precision cuts that classic cuts are used to add colour and structure to menu items. We will demonstrate these and allow you to practice cutting techniques.

You now have a chance to test yourself on what have learnt during this course. Use the self-assessment and where necessary go back and refresh your memory. If you are doing the Digital Certificate, your test will follow.
